Great dessert recipe for last-minute potlucks etc!

I have used this recipe twice - and made it the same morning of the event. Melt, stir, pour in pan, bake, 30 min later, you are done. I love it!

Fudge Brownies

1/2 c butter or margarine
2 squares (2 oz) unsweetened chocolate [if you don't have chocolate, use 3 tbsp unsweetened cocoa and 1 tbsp butter per oz)
1 cup sugar (I use 1/2 cup)
2 eggs
1 tsp vanilla
3/4 c all-purpose flour
1/2 c chopped nuts (I omit the nuts)

Grease an 8x8x2 baking pan. Melt butter and chocolate. (I do this in a plastic mixing bowl in the microwave). Remove from heat; stir in sugar. Add eggs and vanilla; beat lightly til just combined [don't overbeat or brownies will fall]. Stir in flour and nuts. Spread batter in pan. Bake in a 350 oven for 30 minutes. Cool. Cut into bars. Makes 16.

OMG that sounds so good. Wish I could have brownies again. Chocolate gives me headaches and I do so miss it.
